Paleo Challenge: Meal Plan Week 2

IMG_4114I made it through Week 1! For those of you doing the Paleo Challenge with me, it has been great having you along for the ride! Thank you for your posts and comments on Beaming with Health’s page. Keep it coming!

Week 1 was a little hard at first. I was missing grains and dark chocolate most. It got easier as the week went on and as I experimented with cooking some new foods (carnitas and plantains…hell yeah!). It really helped me to write out my meal plan ahead of time for the entire week, so I thought I would share Week 2′s plan. Let me know if you try any of the recipes!

Monday

  • Breakfast: Lydia’s Organic Grainless cereal with coconut milk and fruit of choice. Topped with cinnamon.
  • Lunch: Kale salad with sliced turkey, bacon, and butternut squash
  • Dinner: Grass-fed beef stew with a side salad

Tuesday

  • Breakfast: Lydia’s Organic Grainless cereal with coconut milk and fruit of choice. Topped with cinnamon.
  • Lunch: Grass-fed beef stew with a side salad
  • Dinner: Cilantro Lime Shrimp over spaghetti squash

Wednesday

  • Breakfast: Grass-fed beef stew with a side salad
  • Lunch: Leftover Cilantro Lime Shrimp over spaghetti squash
  • Snack: Apple with almond butter
  • Dinner: Kale salad with sliced turkey, bacon, and butternut squash

Thursday

  • Breakfast: Leftover shrimp stir-fry with a side of plantains
  • Lunch: Tahini Crab Salad over greens with avocado
  • Dinner: Bison burgers (I will leave the egg out for mine) on portabella “buns” with cilantro sweet potato fries

Friday

  • Breakfast: Bison burger, sweet potato, and collard “scramble”
  • Lunch: Tahini Crab Salad over greens with avocado
  • Dinner: Mediterranean chicken stew over cauliflower rice

Saturday

  • Breakfast: Pumpkin chunks (chop after baking) sauteed in coconut milk with cinnamon. Add a dollop of activated nut butter after cooking.
  • Lunch: Leftover Bison burgers on portabella “buns” with cilantro sweet potato fries
  • Snack: turkey rolled up in lettuce wraps dipped in dijon
  • Dinner: Mediterranean chicken stew over cauliflower rice

Sunday

  • Breakfast: Pumpkin chunks in coconut milk Round 2
  • Lunch: Salad with turkey, bacon, and avocado
  • Dinner: Mediterranean chicken stew over cauliflower rice
