Paleo Bacon Chocolate Chip Cookies for Dad! (Gluten-free)

photo_3These cookies don’t need a long intro because, heck, they speak for themselves. Chocolate, bacon, coconut? I even managed to use my leftover almond pulp from the almond milk I made earlier in the week. I simply stored it in the freezer. When I was ready to use it, I defrosted it and added it to the recipe! I used the Vosges chocolate bar that has bacon in it, which makes for a very subtle bacon taste. If you want the bacon to be more pronounced, feel free to mix in small pieces of crisp bacon with your chocolate chips. You can’t go wrong. If you make these for your dad, you are surely getting the daughter of the year award! I hope the whole family enjoys them!

Bacon Chocolate Chip Cookies

  • 1/2 cup almond pulp or almond meal
  • 1/4 cup shredded coconut
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla powder (or 1/2 teaspoon vanilla extract)
  • 1/4 teaspoon sea salt
  • 1/2 cup whole cane sugar or rapadura(could try coconut sugar too, but will be slightly less sweet)
  • 1/3 cup melted coconut oil
  • 1 egg (I used a duck egg but chicken works too)
  • 1 bar of your favorite chocolate, chopped into small pieces (I used Vosges bacon chocolate bar)

photoPreheat oven to 350 degrees. Mix all dry ingredients together in a large bowl. In a separate bowl, mix in the melted coconut oil and egg. Add to dry ingredients and mix thoroughly. Add the chocolate chunks at the end and mix well. Allow the batter to set in the refrigerator for 5-10 minutes.

Scoop into tablespoon sized mounds and add to a parchment paper-covered cookie sheet. Be sure to leave space in between cookies.

Place in the oven for 8-10 minutes. They should be lightly brown on top, but watch to make sure they do not burn. After a couple minutes out of the oven, transfer the cookies to cool. Be careful as they are delicate when warm. Serve with a nice cool glass of vanilla almond milk or peppermint tea. Happy Father’s Day!
