Orange Chocolate Paleo Cakies (Egg-free)

A while back I was talking with my friend, and fellow health coach, Chloe Lauer of Zest for Life Today. We were talking about coconut flour recipes and I was commenting how every recipe I saw had eggs in it. Unfortunately for me, I have an egg sensitivity. So I usually make my baked goods without eggs.

In my honor, Chloe was kind enough to experiment with a coconut flour cookie recipe that did not have eggs in it. Well, the talented chef that she is, she got the recipe right on the first try!

She created these delightful lemon cookies that were sort of cake-like. Here is that recipe.

The other night I was craving something a little sweet, so decided to make a variation of the cookies that Chloe invented. I was in the mood for something orangey, and I just love the combo of orange and chocolate.  Thus, my new variation was born. I hope you enjoy it!

Ingredients:

  • 2 tablespoons ground chia seeds
  • 6 tablespoons hot water
  • 1 tablespoon almond butter
  • 1/4-1/2 teaspoon orange extract
  • 1/4 cup coconut flour
  • Zest of one orange
  • 1/2 teaspoon baking soda
  • 2 tablespoons whole cane sugar
  • 1/4 teaspoon ground ginger
  • 1 1/2 tablespoons of organic butter (slightly soft)
  • Dash of water
  • 1/4-1/2 cup dark chocolate chips

Preheat oven to 350 degrees. Start by combining the ground chia seeds with the hot water. Whisk until a gel-like mixture forms. Add in the almond butter and orange extract and whisk again. Set aside.

In a medium bowl, combine coconut flour, orange zest, baking soda, whole cane sugar, and ground ginger. Cut in the softened butter with a fork or your hands. Mix in until well combined. Now add in the wet ingredients and stir well. At this stage add a little water if the mixture seems too dry. Fold in the chocolate chips.

Roll the batter into small balls and set on a tray lined with parchment paper. Place in the oven for 10-15 minutes. Allow to cool slightly, but they are best enjoyed warm. Serve with your favorite tea.  Enjoy!
