Easy Tuna Salad with Basil (Mayo-free)

photo-12It was way past lunch time, and I was starving! I needed to throw something together and wasn’t in the mood to spend a long time in the kitchen. I had a can of tuna in the pantry, leftover tahini dressing from last night’s salad, a new jar of Bubbie’s pickle relish, and some fresh basil leaves. Voila, I threw together this tasty tuna salad! I served it on a bed of collard greens with some Lydia’s crackers (made from nuts and seeds), olives, a few slices of avocado, and some boiled carrots. Turned out to be a great little lunch! Feel free to make a larger batch of this tuna salad and use it for multiple meals.

  • 1 can of tuna (I used chunk light preserved in water)
  • 2 teaspoons pickle relish (I like Bubbie’s)
  • 2 tablespoons tahini dressing
  • 1-2 large basil leaves, finely diced
  • sea salt and pepper

photo-10Drain the can of tuna and add to a bowl. Mix in the other ingredients. Add a few pinches of sea salt (not much is needed since the tahini dressing is salted) and a couple shakes of ground pepper. Scoop onto crackers, a bed of steamed greens, or a salad. Enjoy!
